Terroir has become an important idea that is influencing food trends here and Canada and across the globe. The idea is that what we eat and drink is affected by the environment where it is produced. With more consumer demand for locally produced foods and drinks and the resurgence of artisan and small-scale local producers, Canada is perfectly poised to take advantage of the terroir ideals.

Hart House in Toronto puts on and annual symposium to explore this idea and have industry leaders gather together to discuss current food ideas and trends and how they are being implemented and brought to the public.

Chefs, artisans, hospitality leaders, food writers recognize that Canada gastronomic identity is a valuable asset and one that we should be displaying to the world. We have a culture that embraces food and is demanding of quality products. Our ethnic diversity and strong food tradition put us at the forefront of the terroir movement.
