Duck from La Ferme Basque de Charlevoix

Foodie-finds FridayIt’s been awhile since I have sent out a Foodie-find update, but having spent the weekend before last in Quebec City I thought I would share my find with you. While eating and drinking my way through the Quebec City wine show, I met Isabel Mihura, proprietress of La Ferme Basque de Carlevoix who was showcasing her wares. Never one to turn down a sample of foie gras, her display immediately caught my eye and her product did not disappoint. After sampling her isabelledelicious duck products, I brought the foie gras mousse laced with Armagnac, the duck rillet (which is the best I’ve ever had) and a savoury country pate. I have been dolling them out slowly, eating a bit at a time to try to make them last!

duck-pateIsabel’s farm is in Charlevoix where she raises ducks the traditional way. The ducks are free range and are only fed corn, which is reflected in the sweet, nutty flavour of the meat. Isabel tells me that the farm is open to the public so you can visit and see first-hand the quality of her family run operation. Her foie gras is available in a various specialty stores locally, at the farm and luckily for the rest of us, you can order it online!

  • My husband and I visited La Ferme Basque in 2007, and Isabel gave us the complete tour. We were very impressed, and their products were delicious! Whenever the subject of foie gras comes up, I mention La Ferme Basque and say if there is an ethical way to make foie gras, this is surely it. It was a memorable visit.
