Artichoke Pesto Linguine and Curtis Stone Cookbook Winner

My “relaxed” recipe recommendation for today is this easy to make spring entrée or starter for Artichoke Pesto Linguine: Make extra pesto and keep it in small portions in the freezer. you can put portions in ice cube trays, freeze and dump into a plastic bag for any time you want an herby boost of flavour or to make a quick pasta. This is a great recipe to make if you need to do some last minute cooking. Pasta and artichokes are already in the pantry and pesto can be made ahead of time – an elegant pasta dish in minutes!

I certainly need “relaxed” recipes to cook with….I’m down to the “crunch” time with my wedding coming soon (Sept.). Trust me, I will need to find “relaxed” versions of everything in life by then!
